What better way to make things merry and bright for the holidays than by crafting some fanciful cocktails? Here, we whip up some delicious recipes, from Spiced Red Wine Ice Pops to Pumpkin Pi-tinis to Sparkling Pomegranate Margaritas. Cheers!

Even though Jack Frost might be nipping at your nose, a wintry ice pop adult treat will warm your soul. This recipe uses a vacuum sealer and specialty vacuum sealing bags (readily available online) to make the perfect single-serve “icy,” but a popsicle tray will work, too.

SPICED RED WINE ICE POPS

One 750 ml bottle of your favorite red wine (pinot noir works really well)

Place the cloves into the rind of the orange. Combine all the ingredients in a large saucepan. Heat over low heat for 5 minutes. Do not let it boil. Turn off the heat and allow to steep for one hour. Strain into a pitcher. (It will be easier to pour into the bags or your popsicle molds.) Cool completely. Pour into icy-sized vacuum sealing bags using a small funnel. Do not fill more than halfway. Vacuum seal on lowest pressure but maximum sealing heat. If using the molds, pour to the top of the mold and insert popsicle sticks. Freeze completely, at least four hours.

The warm flavors of pumpkin pie come through in this dessert-worthy cocktail. Leave out the alcohol for those who’d prefer a lighter version.

8 ounces vanilla-flavored rum or vodka

½ cup half and half (fat-free works great)

In a large bowl, combine all the ingredients with a whisk. Transfer to a large drink shaker (or a pitcher). Add ice, shake or stir. Strain into four martini glasses.

Tip: Consider wetting the rims of the glasses and placing them in a shallow dish filled with cinnamon sugar for a fancy touch.

Pomegranate juice provides the backdrop for this festive and fruity cocktail. Make the flavor base ahead of time as a time saver, as it keeps for four days in the refrigerator.

One 750 ml bottle sparkling rose

1 lime cut into quarters for garnish

In a large pitcher, combine the flavor base ingredients and blend to dissolve the sugar. Allow to steep in the refrigerator overnight (or up to four days). To assemble, remove the rosemary and add the sparkling rose, stirring gently. Serve in large margarita glasses with a lime wedge as a garnish.
